Frying in a wide karahi means filling a wide pan, and most of that oil never touches the food. This pot is 12 cm across and 12 cm deep, so the oil goes up rather than out. Samosas and pakoras are fully submerged in a fraction of the quantity, and the basket lifts the whole batch out at once to drain.

Why a small deep pot beats a big pan

You use far less oil

Depth comes from the narrow base, not from volume. A pan twice as wide needs four times the oil to reach the same depth — that difference shows up every month.

The basket does the awkward part

Questions about this pot

How much does it hold?

Around 1.3 litres to the brim. For frying, fill it about halfway so the oil has room to rise when food goes in — that is roughly two or three samosas at a time.

Does the pot handle get hot?

It is steel, so treat it as hot and use a cloth. The basket handle has a silicone sleeve, which is the one you will be lifting during cooking.

Is there a lid?

No. It is a two-piece set — the pot and the basket. Never cover hot oil anyway.

Why 304 steel specifically?

It is the food-grade grade that resists rust and does not pick up flavours. Cheaper pots use thinner, lower grades that stain and warp over a hot burner.

Safety: hot oil is dangerous. Never fill past halfway, never leave the pot unattended on a lit burner, keep children away from the hob, and lower food in gently rather than dropping it. Dry food thoroughly before it goes in — water in hot oil causes violent spitting. Never move a pot of hot oil, and never put water on an oil fire.
